Authentic Mutton Harissa Recipe
Although it is a time-consuming mutton recipe but once done, it is so delicious and full of proteins. It is served with Naan or Roti (bread).
Ingredients:
- 2 and half kg goat/lamb meat (Separate Bones and meat)
- 250 grams wheat
- 30 grams green gram dal (moong dal)
- 40 grams rice
- 2 mid-size onions
- 3 to 4 tea spoon black paper powder
- 1 cup cooking oil or ghee
- Salt as per taste
- 250 grams butter (or as per your taste)
Directions:
Step 1:
Fry onions in oil or ghee till its color changes to red. Add boneless meat and cook it till its color changes. Then add one and half litre water (add more water, if needed). Cook it on a medium flame till it is tender. Once meat is in a tender form, then use chopper to breakdown it into gooey form.
Step 2:
On a separate cooker or pot, prepare bone stock of bones separated from meat. Take 3 litre water and cook it on medium flame till stock color is brownish. This may take 3 hours. Bones stock is kept separately.
Step 3:
In a wide pot mix wheat, salt and 1 and half liter water and cook it on a medium flame till it is tender. Next chop it in chopper to the gooey form.
Step 4:
Now cook green gram dal (mong dal) and rice. It will be a thick mixture once fully cooked.
Step 5
In this step, in a wide pot mix all the stuff you have cooked including bones stock and add black paper and salt as per your choice. Stir fry the mixture till it is converted from gooey or liquid form to thick form. Keep stirring it regularly. This may take 2-3 hours.
Step 6
Add butter to serve.
